Loaded Potato Nachos

When you’ve run out of nacho chips - make your own super easy potato chips! Its a little more filling and a definite crowd pleaser!

INGREDIENTS

  • 3 medium potatoes, cut into 1/4” slices
  • 3 Tbsp melted bacon fat
  • Salt to taste
  • 1 lb SAGE AND SHEPHERD ground beef
  • 2 Tbsp taco season
  • 2-3 cups shredded cheese
  • 3 green onions, diced
  • 2 jalapeños, diced
  • sour cream, hot sauce, salsa (optional - for serving)

METHOD

  • Preheat oven to 450F and line baking sheet with parchment paper
  • Melt bacon fat in a sauce pan. Place potato slices into baking sheet and cover entire surface, spreading out into 1 layer
  • Pour bacon fat over potatoes evenly, and sprinkle with salt
  • Put potatoes in oven for 12 mins or until potatoes are crispy. Meanwhile, cook ground beef with taco seasoning
  • Take potatoes out of oven and top with ground beef, jalapeños, green onions, and cheese
  • Bake for 5 more minutes until cheese is melty
  • Serve with sour cream, hot sauce, salsa, or whatever else you want!
